Homemade Garlic Naan

Homemade Garlic Naan Recipe

I have been making Naan a lot these days, ever since I tried Coriander and Garlic Naan.... This is the most perfect soft and fluffy Naan recipe I have tried so far and it’s eggless too :)..... My son loves it and he even happily takes it to school for lunch.... The best thing is it will remain soft for hours after making..... This time I didn’t add coriander but increased the amount of garlic to make Garlic Naan.

Maida Chapati / Indian Flat Bread with All-purpose Flour

Remember the post where I wrote about our life in Gomia and our cook Alku? Well this Maida Chapati is also something I learned from him.... The secret to making this soft maida chapati is mixing a little oil with maida at first before adding water.... This will help to roll out maida dough easily or else it springs back making it really difficult to handle and roll out into perfect rounds.... An excellent and healthy alternative to flaky Kerala Parotta, which requires a lot of oil....

Keema Masala / Stir-fried Indian Minced Meat Masala

Keema masala is very popular in Indian restaurants as a side dish with Maida Parotta or with chapathis... It can be made with chicken, beef or mutton mince.... Usually they add peas along with the mince; but I substituted it with carrots... Keema masala goes well with Indian flatbreads, Palappam or Vellayappam… Also this is great as a wrap inside chappathi, as a topping for keema dosa or can be used as a stuffing for Keema Paratha or stuffed buns or even as a stuffing for Idiyappam...Do try and if you get more ideas on how to use this, do let me know :)....

Homemade Cinnamon Rolls Recipe

My son loves Cinnamon Rolls more than anything else! If I ask him what I should make for teatime, the first answer I get is Cinnamon Rolls and the second Doughnuts! He will be very happy if I gave him cinnamon rolls every day and it will fetch me lots and lots of bear hugs and kisses in return :D.... I make these for him at least once a month and I have tried several recipes till date.... I have also posted an eggless version earlier... This particular recipe I have been using for the last one year since Ria posted it.... I took step by step pictures last summer when I made these in Kerala.... but never got a chance to take the final product’s picture..... finally I took these pictures when I made it last week...

Ari Vada Recipe / Deep Fried Savory Rice flour Fritters

Mom used to make this simple snack for us while we were kids… She used to make Savory Orotti (Flat Rice Bread) too with the same recipe. While Ari Vada needs deep-frying, Orotti is made on a skillet.  You have to adjust the amount of water according to the rice flour you use. Also if you are making this vada for small kids reduce green chillies or completely omit it. We used to have this with ketchup…..You can even serve with Coconut Chutney.

Double Chocolate, Almond and Flax Cookies

Remember the Chocolate Chip, Cranberry, Flax Cookies I made some time back? Well it was a huge hit in my family. I have made it umpteen times since with different dry fruits and nuts.... Last week when I was searching for a healthy chocolate cookie recipe I found Miryam posted the same recipe with the addition of cocoa powder..... I made it immediately and again it turned out to be a big hit:)... Since I am not a big fan of walnuts I substituted it with Almonds and I used sunflower oil....

Before going to the recipe I want to share something with you all..... Have you noticed the new red badge on the right side? Yes! It’s my first ever DMBLGIT (Does My Blog Look Good in This) win:).... It was a wonderful surprise early this morning to find out that my Banoffee Pie Served in A Glass has won 3rd place… I always wanted to get one of those badges for my blog and it is like a dream come true for me :).....

Cauliflower Mappas Recipe / Cauliflower in Creamy Coconut Sauce

Sometime back when I posted Broccoli Mappas recipe, many of you tried and loved it….. This time I made Mappas with Cauliflower instead…. Keralites love ‘Mappas’ whether it’s Non–Veg or vegetarian … this spicy, creamy, coconut milk based curry goes well with almost anything like bread, chapathi appam or boiled rice….. Since it’s the Lent season I do make a lot of vegetarian side dishes and you can expect to see several more veggie dishes in the near future.....
