Diamond Cuts Vilayichathu / Diamond Cuts coated with Sugar Syrup


This is another snack Kerala Christians make during Christmas time. It is a diamond shaped deep fried snack coated with cardamom flavored sugar syrup. It was a regular snack at home when we were kids; and I always used to pick up and eat the ones that are fully drenched in the sugar syrup :)..... Even without coating in sugar syrup it is a great snack especially with drinks....

Ingredients:
All purpose flour/ Maida – 250gm
Egg-1, beaten slightly
Salt- a pinch
Coconut milk- ½ cup or as needed
Oil for deep frying
Method:
  • Mix all purpose flour, egg and salt in a bowl.
  • Add coconut milk little by little into the flour and knead it into soft and smooth dough.
  • Cover with a damp cloth for 10 minutes.
  • Divide the dough into two balls and roll out into thin sheets.
  • Cut this dough into 1” diamond shape using a pizza cutter or a knife.
  • Heat oil in a pan and deep fry the diamond cuts on medium heat till it turns in to a golden color.
  • Remove from oil and strain it on a paper towel.
Sugar Syrup:
Sugar- 1 cup
Water-1/2 cup
Cardamom powder- ½ tsp
  • Heat sugar and water in a pan; boil this to 1” thread consistency syrup and add powdered cardamom and remove from fire.
  • Cool slightly and add fried diamond cuts and mix to coat the syrup evenly on diamond cuts.
  • Cool completely and store in an air tight container.
