Kerala Style Pork Fry / Nadan Panniyearchi Ularthiyathu

For special occasions like Easter or Christmas, meat is an inevitable dish in Kerala Christian homes, especially Erachi Ularthiyathu / Meat stir fried! I was surprised that I had not posted a Kerala meat fry recipe even after 5+ years of blogging!! It is because whenever I make meat, it does not last long enough to take pictures and also for such common recipes I have wondered about the need to post as almost everybody knows how to make it :).... But now a days I have been getting many requests for such recipes and hence I will make it a point to post those common Kerala recipes.....If you have any such requests do let me know :)....

Pork is an absolute favorite of mine… I know a lot of you may be thinking while reading this as to how I could possibly think of eating Pork during Lent ;)....  Sorry guys I made this dish quite some time back and somehow delayed posting it.... Whenever I get hold of Pork, I tend to make Pork Veengali and this time for a change I made it like Kerala Beef fry..... Every home has their own way of making erachi ularthiyathu and this is how we make it at home.... If you are a Pork lover do try this and enjoy it with rice, appam, chapathi, bread or as a short eat with your favorite brand of rum/brandy/whiskey/toddy like a true Achayan (malayali Christian guy) way :D :D

Orange Wine Recipe

Kerala Homemade Orange Wine Recipe

Last month I decided to experiment by making orange wine. I am glad I did because the result has exceeded all my expectations. It has a very unique zesty flavor that is quite distinct from other types of wine. So far all those who have tasted it have loved it. The wine is ready in less than a month and is quite strong too…so you don’t need to wait months for it to mature. If you like to have a unique wine this Easter try this, it’s easy to make with easily available ingredients and you can have a blast with family and friends :)....

Pacha Manga Chammanthi / Raw Mango Chutney

Pacha Manga Chammanthi Recipe

Pacha Manga Chammanthi, every Malayalis’ favorite with a bowl of kanji and pappadom.... This simple tongue tickling dish is best when prepared on an Arakallu but in modern kitchens we have to make do with the small wet grinding jar of our mixer grinder.... This is best when made with Kanthari mulaku/ bird’s eye chillies and if that’s not available you can use green chillies or dry red chillies.... Make sure not to add any water while grinding.... usually manga chammanthi is serverd with rice but it can be eaten as a quick snack by spreading between bread slices....

Onion and Poppy Seed Crackers ~ Daring Bakers’ challenge, February 2013

Sarah from All Our Fingersin the Pie was our February 2013 Daring Bakers’ host and she challenges us to use our creativity in making our own Crisp Flatbreads and Crackers!
I missed the last DB challenge and I didn’t want to miss this month too… February was a very busy and hectic month for me, birthday, Church Harvest festival and 5 days of long holidays and I somehow managed to bake these crackers on time… Thanks to Sarah for making this month’s challenge so simple and easy! These onion crackers are very easy to make and are very addictive to munch on… I also served these with little cream cheese topped with some fresh vegetables and herbs… Instead of cream cheese you can mix some Mayonnaise with a dash of Sriracha sauce too… I served these crackers with wine to my guests and they all loved it!

Peach Ombre Rose Cake Picture

It was my hubby’s birthday a couple of days back and after much planning & discussion with him and our little one I finally decided to try an Ombre Cake with buttercream frosting... then came the part of choosing the color and both had their own views but finally I chose peach :D.... An Ombre cake is a layer cake with graded hues of a single colour, as well as matching, graded frosting. I used the same White Cake recipe from my Black and White Layer Cake and baked the cake in four 6 inch round pans. Rose frosting is inspired from Amanda and you can the detailed tutorial on her blog.... Here is how I made this cake....

Kappa Masala / Kerala-Style Tapioca Masala Recipe

Kerala Style Kappa Masala Recipe

Kappa Masala is a new dish for me.... Back home we always used to make Kappa Puzhugiyathu, or Kappa Curry and Kappa Mathi Puzhukku with ground coconut and spices in it... This kappa masala does not have coconut and it’s a dry preparation like mezhukkupuratti....This can be eaten as a snack on it’s own, with tea or as a side dish with boiled rice.... I am part of the Kerala Kitchen group on FB and I made this dish especially for the group.... This recipe was adapted from Edible Garden, who is hosting the Kerala Kitchen cookout this month. So here is how I made this very easy Kappa Masala...

Mango Cheese Cake Recipe

Mango Cheese Cake

This recipe was shared by Neethu, a friend of mine in Kuwait. You can make this in a spring form pan and cut it into wedges before serving or you can make it in individual dessert glasses. This time I made it using my small cake rings and it came out looking very pretty :).... For the first layer I baked the sponge cake in a jelly roll pan  as I was planning to assemble it using  small cake rings.  Alternatively, you can bake it in a square or spring form pan.... For the cake base you are free to use store bought sponge cake, eggless cake or ready to make cake mix.... For cream cheese I used Kiri cream cheese but you can use any brand you prefer.... Substitute mango with fresh strawberry jelly and pulp and you will get a beautiful pink cheese cake.... Do try this easy Mango Cheese Cake this Valentine’s Day and let me know how you like it.....

Chocoflan Cake / Chocolate Flan Cake

Chocoflan cake or Chocolate Flan cake, a Mexican dessert, is a chocolate cake on the bottom with a flan/ caramel custard on top. It is also known as impossible cake or Magic Cake.  You pour the caramel, then the chocolate cake batter and the flan on top, then get it in the oven and during baking process these two switch places and it comes out with the beautifully baked custard at the bottom and the cake on top!! Impossible right?? But it’s true.... I had my own doubts while baking, whether actually they switch places or the cake and flan mix together and comes out in a mess.... but it baked beautifully.... And I got an awesome looking magic cake which is a sure showstopper! This is a great dessert for parties, as this cake has to be made a day ahead before you want to serve it, It makes a stunning presentation and it is very tasty and you will get at least 15 servings with the total amount. I only made half the amount of the cake in my 6 cup capacity bundt pan.  I also added little nutmeg powder and a teaspoon of caramel sauce to the flan mixture to reduce the eggy smell.... You can completely omit that.... Do try this cake to impress your guests or your better half or your valentine and don’t forget to send me a thank you note  ;) ;)....
