Fondant Icing Recipe (Eggless)

As a tradition every year, I make Christmas Fruit Cake and decorate it with icing. Earlier I have posted another fondant icing recipe and in the last couple of years I was using the same icing for my Christmas cake. But a lot of my readers expressed concern about using raw egg white and so this year I thought of using another recipe I found in Vanitha magazine, which has no egg in it. It came out very well …. Also please note that I am not a trained cake decorator and have not taken any cake decorating courses ….. So my cake decorations are not perfect … :D





Fondant Icing Recipe (Eggless)

Ingredients:
Gelatin-1 tsp
Water- 1 oz
Liquid Glucose- 1 tbsp
Glycerin- ¼ tsp
Icing sugar- 300-400 gms


Method:
  • In a saucepan mix liquid glucose and water. Add gelatin and keep the pan over a big pan of boiling water and melt this mixture.
  • Remove and add glycerin and icing sugar and make a smooth, soft and pliable dough.
  • Add desired colour according to the design you want to make.
  • Always keep the fondant dough in an airtight container.

  7. Amazing wok. Just what I was looking for..an eggless fondant recipie. But if I dont get liquid glucose can I use just glucose powder or any other substitute?

    1. No you cannot use glucose powder... that's different... You will get liquid glucose in India... Sorry I don't know any other substitute.....

  11. Its eggless but the gelatine is an animal product so not suitable for vegetarians.

      Yes you are right, gelatin is an animal product... but I never said this icing is suitable for vegetarians :) only said it's eggless...

  12. Just a quick note here.. this may be eggless but it's not suitable for vegetarians! Gelatin usually is made from PORK OR BEEF.. that's dead pigs, for the layperson.

  19. Hi Swapna...the cake is beautiful and the decorations look perfect. However, I would like to point it out here that gelatin is not vegetarian and a lot of vegetarians do not consume it. An alternate to gelatin can be agar agar powder/flakes

    1. Thanks Jyoti... and of course I know gelatin is an animal product and lot of vegetarians do not consume it... Like my earlier reply to another reader, I never said this icing is suitable for vegetarians too :) only said it's eggless...
