Savoury Muffins

Ingredients:
2 cups self-raising flour
½ cup finely chopped sausages/ ham
½ cup grated cheese
1 cup of finely chopped mixed vegetables of your choice (carrots, capsicum, onion, mushroom etc)
1 tablespoon finely chopped parsley/ corriander
125 g melted butter
1 cup milk
1 egg, lightly beaten
A small pinch of Oregano, Thyme, Rosemary & Basil (optional)



Method:
  • Pre-heat oven 180°C and grease a muffin tin.
  • Combine dry ingredients in a large bowl.
  • Stir in butter, milk and egg until just combined. Do not over mix.
  • Bake in oven for 15 minutes or until cooked and golden.
